Martha Smith is an excellent resource. She is available to conduct on-site trainings as a consultant regarding students with disabilities in health sciences. She has presented to higher education institutions both nationally and internationally on the topic, and served as a researcher and disability services director at Oregon Health and Science University and Western Oregon University.
Her e-mail address for consulting issues is:

Hope this is helpful,
Melanie

Great question. I run into the same thing with our Social Work and
Education Masters programs. I am anxious to hear what others are/have
done.

Subject: [Icu_sig] Students with Disabilities and Field Experience
Good afternoon,
I am curious if anyone knows of consultants or professional journals
which speak to educating pre-professional programs/departments (Social
Work, Nursing, Physical Therapy, Education) on transitioning students
with disabilities into field experiences. We have a number of
pre-professional programs which require field experiences for graduation
and it never fails that faculty become concerned with how students with
accommodations would 1) be accommodated in field, and 2) able to perform
functional duties.
While this seems to be an ongoing conversation among our departments, I
would like to know how other Disability offices educate and deal with
this issue. Also, what is considered the best practice for situations
as this?
Thanks!
Peace,
